For my daughters 4th birthday a few years ago I decided to surprise her with a Piñata Cake. It was a huge success!
First you need to make two batches of cake splitting each into two round cake pans. In the end you should have four round cakes (you’ll only need three so wrap the fourth is some plastic wrap and freeze for a later date).
Cut the top off of one of the cakes making the top flatter. This will be the bottom layer of the Piñata Cake.
Add some icing around the edge of the top of the cake.. Don’t put any icing in the middle of the cake. Here’s my Buttercream Icing recipe.
Very carefully cut the centre out of the second cake and then add it on top of the first cake. This will create a nice little pocket.
It’s actually one of the simplest cakes I’ve ever made just make sure that if you use unwrapped candy that you don’t make the cake too far in advance otherwise your candy is going to get kinda soggy and the colours will bleed into the cake. Not so pretty!
